Avocado toast. Everyone seems to love it, critics claim millenials might have more money to buy a house if they stopped buying it, and well, it just tastes good. I have been eating avocado toast for a long time and had no idea it would become the food trend it now is. Five years ago when I was getting into a clean eating lifestyle, this was a staple of mine. It’s quick, easy, and pretty nutritious. Since my son has been on an avocado kick lately and because he loves Marvel superheroes, I wanted to introduce him to this delicious toast, but in a more fun way. Enter the Hulk Smash Black Bean Avocado Toast.
Hulk Smash Black Bean Avocado Toast
Although I pictured this turning out more like Hulk, and less like a monster, what better way to start off your day than with a big hulk smash of nutrients. Not only is this fun to look at, but it’s simple to make and gives you a good serving of healthy fats, protein, and unrefined carbohydrates. It’s also really delicious, making this a win-win.
- Toasted bread (whatever kind you want, I went with whole wheat)
- Cooked black beans
- Sour Cream
To make, start with toasted bread. Cut open your avocado and lightly mash it onto your toast. Add cooked black beans on top for the hair, eyebrows, and the inside of his mouth. Next put some sour cream in a ziploc bag (or don’t if you’re not feeling up to it) to pipe sour cream for his eyes and teeth.
Add a black bean for each pupil of the eye and that’s it. Time to Hulk smash the toast right into your mouth.
I made quite a few slices of the black bean avocado toast and they were devoured pretty quickly. My son thought they were the greatest thing ever and hopefully he’ll be asking to eat these pretty often.
